I julienne all the vegetables: 1/2 medium onion, 1 small green bell pepper, 1/3 small red bell pepper, a very large zucchini slice about 8 cm thick, 1/4 leek, 1 medium carrot. I put all but carrot and zucchini over medium-low heat to poach. IMPORTANT I do not add salt in any step since the soy sauce already gives it enough salt.

Cut the chicken breast into thin strips. When the vegetables are almost ready, add the carrot and zucchini along with the chicken and cook over medium-low heat.

Separately, we cook the noodles. I always put them a minute less than the recommended cooking time because they always soften a little more when mixed together.

When we see that the chicken is done, I add about half a teaspoon of ginger and one teaspoon of turmeric to the vegetables. I usually do this step by eye. I stir.

I add the drained noodles to the vegetables and add the soy sauce to taste. Mix well and serve.
