First we are going to make the sponge cake: We mix the oat flour (it can be buckwheat, starch, nuts), the 30 gr of chopped almonds, 1 egg, 20 gr of erythritol (I used date paste 40gr). Then with all the ingredients mixed together, whip the egg whites until stiff and add to the previous mixture.

Cover a baking tray with baking paper and spread the dough so that it covers almost the entire base. Bake for 12 minutes at 180° with heat up and down without air.

Remove from the oven, let cool and once cool cut two portions of the size of the mold where we are going to assemble everything.

The next step is to make the cream: On one side we whip the cream and on the other we mix the mascarpone with 30 gr of erythritol. Once the two steps have been completed, add the cream to the mixture.

To assemble: Mix the coffee with the water and cocoa. Place a layer of the sponge cake and soak with the previous mixture. Sprinkle cocoa and spread half of the cream. Sprinkle cocoa again and repeat the process with the other layer.
