To start, peel and chop the zucchini until you have about 60gr. (in my case) and a little onion (to taste). Add a little EVOO in a frying pan and cook until golden brown (as in the photo).

Once it is done, beat an egg (in my case, I added a little egg white) and remove the zucchini and onion from the paella pan and add it to the egg. We put it back to the pan with a little EVOO and make our omelette. When it is to our taste, we turn it over and .....¡listoo!
