✳ INGREDIENTS ✳ * FOR THE BASE: ▪︎ 50gr cashews. ▪︎ 9 pitted dates. *FOR THE CREAM: ▪︎ 1 plain vegetable yogurt.(I used soy). ▪︎ 70gr blueberries. ▪︎ 6 pitted dates. ▪︎ 1 tablespoon brewer's yeast. ▪︎ Juice of 1 lemon. ▪︎ 100ml vegetable drink. ▪︎ 2gr agar-agar. *BLUEBERRY JAM: ▪︎ A handful of blueberries. ▪︎ 1 teaspoon chia.

✳ HOW IS IT DONE? ✳ For the base, we crush the ingredients and spread on the mold, pressing well so that it is well compact and reserve in the refrigerator. For the cream, hydrate the dates. We crush all the ingredients except the vegetable drink and the agar agar. Pour the mixture into a saucepan, dissolve the agar agar in the vegetable drink and add to the mixture, cook for 5 minutes, it must boil. Add the mixture to the mold and let it cool at room temperature. For the jam, crush blueberries and mix with chia seeds, let stand 10 minutes. When the cake is cold, put it in the refrigerator to let it rest, when serving put a little jam on top and enjoy.
