Cut the onion (I used a small one), half a red bell pepper, a small carrot and half a very small zucchini and sauté in a pan with extra virgin olive oil.

Meanwhile, mash the chickpeas with a fork. If you use canned chickpeas, drain and wash them before mashing.

Add spices to taste, I used fresh parsley, garlic powder, black pepper and salt. Crush until you get a homogeneous mixture, try not to leave any chickpeas uncrushed.

Once the vegetables are poached, add to the mixture and integrate with a fork. Add a few drops of lemon juice for more flavor.

I let the mixture rest in the refrigerator for an hour so that they can be formed without any problem.

Remove from the refrigerator and shape into patties. Dredge in flour (I used wheat flour) before frying. Remove when they are golden brown. You can bake them in the oven for 15 minutes.
