Sweet potato falafel with yogurt sauce 🌿

We start making the sweet potato falafel and for this we put a whole sweet potato in the oven wrapped in aluminum foil and leave it at 180°C approx. 30 min, until we see that it is very soft.

In a blender we mix the sweet potato, two peeled garlic, juice of half a lemon, cumin, parsley, paprika and salt. We grind everything.

In a bowl pour the mixture and integrate the chickpea flour with a spatula until a homogeneous dough is obtained. The dough should be wet and a little sticky. If it is too dry you can add a little water.

Make small balls and coat them with flax seeds. Place on baking paper and bake at 180°C for about 20 minutes. Halfway through baking, turn the falafel over to brown on both sides.

For the yogurt sauce, we crush two soy yogurts with a spoonful of lemon juice, a spoonful of olive oil, a peeled garlic (if you don't want it to sting too much, remove the germ or use garlic powder), some mint leaves and a pinch of salt.

Assemble the falafel with a little sauce in the middle and dip!
