Oatmeal pancakes/crepes filled with yogurt and fruit

Beat the egg, milk and oat flour with a mixer. Add cinnamon and sweetener to taste. Let the dough rest for at least 30 minutes in the refrigerator to take body.

Heat a non-stick frying pan over medium heat and brush it with a little olive oil. When it is hot, pour a third of the batter.

Let it cook on that side and when the edges begin to pull away, turn it over. Repeat the process with the whole dough.

For the filling we can use any type of yogurt or whipped cream cheese. I also added a teaspoon of protein powder to the yogurt. Divide the yogurt among the 3 pancakes.

Cut the fruit and fill the pancakes.

On top I put an ounce of chocolate melted in the microwave with a little milk.
