Put a pot of water on the stove. While the water is not boiling, peel the potatoes and cut them into pieces of approximately the same size. Also chop half an onion.

Put a frying pan on the heat with a tablespoon of extra virgin olive oil. When the oil is hot, add the onion. In a couple of minutes, when it is golden brown, add the minced meat to the frying pan, mix and season with salt and pepper.

When the water is boiling, add the potatoes and cook for ten minutes.

When the meat is browned, lower the heat to the minimum and let it rest. Then preheat the oven to 200° above and below.

Grate the cheese and set aside. When the potatoes are cooked, drain and set aside. Add a tablespoon of extra virgin olive oil, a pinch of salt and nutmeg to the potato bowl. Mash the potatoes with a fork.

Choose an oven-safe frying pan, and spread a teaspoon of extra virgin olive oil on it. Place a base of mashed potato on top, then a layer of meat, and finally a layer of mashed potato. On the surface of the pie, add grated cheese and fresh parsley.
