wash the vegetables well with water and dry them with kitchen paper.

Cut the tomatoes, eggplant, carrot, tomato and zucchini into slices as thick as you like.

To remove the bitterness from the eggplant, place it in a colander, sprinkle plenty of salt and let it "sweat" for 30 minutes. Then wash it well with water and drain it.

Place the tomato sauce in the mold you have chosen, it can be round which looks great but you can also use a rectangular or square one.

Preheat the oven to 170ºC with heat up and down and fan.

Now comes the fun part, you have to place the vegetables alternately.

If you have leftover vegetables you can use them, for example by sautéing them another day, but don't throw them away!

Pour a drizzle of extra virgin olive oil over the vegetables, salt to taste, freshly ground black pepper and herbs to taste, in this case I used dried thyme.
