We will start by heating a little oil in a saucepan, and there we fry all the vegetables that we will have previously chopped. Add the spices and cook lightly.

Now add the tomato and let it cook until it evaporates a little water, then add the lentils, coconut milk and water. Stir well, cover and cook for about 30 minutes over medium-low heat.

Meanwhile we prepare some brown rice, and once everything is ready, we plate it, add some cilantro, and enjoy!
