Caprese mushrooms with roasted cherry tomatoes

Wash, peel and core the mushrooms.

Finely chop the garlic and mix it with the oil. Coat the mushroom with the garlic oil.

Chop the mozzarella and place a small piece inside each mushroom and a cherry tomato on top. If the mushrooms are small (like me) you can put half a mushroom.

Place the stuffed mushrooms on a baking tray and next to them all the leftover cherries.

If there is oil left over you can add it on top of the stuffed mushrooms and cherries. Sprinkle with salt, basil or the spice of your choice.

Bake for 10 minutes at 200 degrees or until golden brown.
