INGREDIENTS: - 2 medium potatoes - 1 onion - 2 eggs - 150g mushrooms - 75g ricotta - a bunch of chives - 1 clove of garlic - EVOO - salt and pepper - pepper - arugula

Preheat the oven to 200°.

Cut the potatoes and onion into wedges.

Place them in an oven tray, pour a couple of spoonfuls of EVOO, season with salt and pepper and mix well.

Bake for 35 minutes.

Cut the mushrooms into quarters and add them to the tray. Bake for 15 minutes more.

Beat the eggs with the chopped chives and the ricotta.

Pour it into the safata and bake for 10 more minutes.

Serve with some arugula leaves.
