Previously, defrost the prawns, peel them well and clean their guts by cutting them in half.

Chop the onion and poach it.

When it is poached but not browned, add the rice, stir it a couple of times and add the saffron.

Pour a ladleful of the broth, stir frequently until it is absorbed. When the broth is absorbed, add another ladleful and stir. This way until the broth is used up.

More or less in the penultimate ladle, add the prawns. Put them towards the end so that they are not dry.

When it is ready (without broth but creamy), add a tablespoon of butter and the cheese to taste. Stir so that everything is well integrated.

Serve with chopped fresh parsley.
