The first step is to soak the texturized soybeans to soften them.

Cut the eggplant into slices not too thick. Once cut, put it in the airfryer for about 10 minutes at 180 degrees.

While the eggplant is cooking, in a frying pan with a little hot oil add the chopped onion and bell pepper. Once the vegetables are done, add the soy and fried tomato.

In an ovenproof dish, place a layer of eggplant, then the sauce and then the cheese. Repeat this process until all the ingredients are used up.

Preheat the oven to 200 degrees Celsius and bake for approximately 5 minutes or until the cheese is golden brown.
