Mix the flours, add the water and the yeast and stir until the dough is formed.

Cover with plastic wrap and let stand for half an hour.

Remove the dough from the bowl and knead it for 5 minutes, then let it rest for another 20 minutes.

After 5 more minutes knead, shape into a ball with a little EVOO and put the dough in a bowl, let it rest for 1 hour to double its size.

Prepare a bowl (I have a rectangular sponge cake type) and put a cloth in it, take the dough out of the bowl, flatten it on the counter in the shape of a rectangle and close the dough taking the dough from one side to the other making the roll. Then put the bread in the bowl with the cloth and leave it to rest for 1 hour.

With the help of baking paper we remove the dough from the container, having put the cloth it comes out great and place it on a baking tray with the paper.

We make a longitudinal cut and bake 35 minutes at 200°C :)
