🌱 Vegan pancakes with scrambled eggs and roasted vegetables

For these vegan pancakes we simply need whole wheat flour (in my case) and water. It has to be a liquid texture. - We add the flour to the bowl, mix with a little salt and gradually add the water. - Heat a non-stick frying pan over medium heat, drizzle of AOVE💛 and add a little of the mixture. - We make circular movements with the pan so that it spreads well all over the pan and let it cook. - With the help of a spatula, we turn them over and cook the other side. When they are ready, remove them to a plate.

🐣 For juicy scrambled eggs, we need to beat the eggs without generating too much foam. - Once beaten, season with salt and pepper and add some grated cheese. Mix. - In a hot frying pan over medium high heat, put a little AOVE💛 and add the mixture. It is important that the egg does not cover the whole pan because otherwise it will not be as juicy. - As soon as we add the egg, remove the pan from the heat and with a spatula gently move the mixture so that it sets with the residual heat. (Below I leave you my instagram where I explain it in an IGTV that will be much more visual). - In less than a minute we are already taking it out and placing it on top of the pancakes.
