Rinse the hazelnuts and soak them for at least 6 hours before preparing the drink. Pour them in a bowl and cover them with water. This way we get them to absorb the water and start the fermentation process, to enhance all the vitamins and nutrients they contain.

After the soaking time, discard the water and rinse them again to remove any remaining impurities.

Add half of the water and blend. When you have a thick paste, add the rest of the water and continue blending for a few minutes. At this point we can add a little cinnamon to sweeten, a little date paste, pure cocoa, honey ... if you like a sweeter drink. I personally did not add anything because I like the natural flavor of the hazelnut.

With a gauze cloth or a fine stocking, filter the paste and drain well to remove all the "milk". In my case, I filtered it twice so that there would not be too many lumps. We leave it in the refrigerator and enjoy. Before drinking it, it is convenient to shake it. It will last approximately 3-4 days in the refrigerator.

IMPORTANT!!! Do not throw away the hazelnut crumbs that you filter. They can be put in the oven at low temperature and dry and we can use it as hazelnut flour !!!! Or for a crumble, desserts, etc !
