Place an open slice of extra cooked ham on a plate.

On one end, add guacamole and whipped queso fresco and roll up.

Put a little EVOO or coconut oil in a frying pan or griddle and when it is hot place the rolls on it. Turn them over and over so that they cook on all sides.

In a bowl mix 2-3 teaspoons of yogurt with a pinch of curry.

Serve the rolls and dress with the yogurt and curry mixture and add chopped chives on top.
