Chop the half onion into julienne strips and fry it in a frying pan until slightly poached.

When browned, add the tomato without skin and half a glass of wine. Let it boil until it reduces and the tomato melts. When the wine is completely reduced, let it sauté for a while more.

We take the mixture to a blender container. Add a little black pepper, salt, cumin, a little water to adjust the thickness and food coloring if we want to increase its color. Then we let it reduce for about 20 minutes over medium heat.
