Wash and grate the lemon peel and mix with the oatmeal, grated coconut, yeast, vanilla essence and cinnamon. Add a few drops or a teaspoon of vanilla essence. Like the cinnamon, it will depend if you like it with more or less taste, but a teaspoon of dessert is fine.

Beat 2 eggs and mix with the other ingredients until you get a paste and let it rest for about 30 minutes in the refrigerator. You can add dark chocolate if you like, chopping it into small pieces or chopping it in a food processor.

Put the oven on. Take your dough out of the fridge and make little balls that you will flatten and place on a tray. I always place them on baking paper. Bake in the oven for 12-15 minutes at 180 degrees.
