Wash the eggplants and cut them lengthwise into slices. Heat a frying pan or griddle and grill the slices with a little salt and EVOO until soft.

Put a sheet of parchment paper on the baking tray and the eggplant slices on top. Add homemade fried tomato, grated cheese and the toppings that you like (I put in some tuna and in others slices of ham).

Add oregano and bake in the oven at 200 degrees until the cheese is slightly browned.
