For the dough: Mix 50 grams of ground oats with cinnamon powder and half a teaspoon of cocoa powder. Once homogeneous, add 200 grams of egg whites and beat.

For the cocoa cream: mix 30 grams of oatmeal, 10 grams of cocoa, cinnamon, a teaspoon of date cream and the coconut drink. Stir and take it to the microwave for about thirty seconds, stir and put it back in the microwave. It should be thick, if this time is not enough, repeat until the desired texture is achieved.

Heat a frying pan and add a little coconut or olive oil to prevent sticking. Once hot, add half of the batter mixture and cover with a lid. When bubbles come out, add the cocoa cream in the center and fold the ends towards the center (like a bollicao). Repeat the process with the remaining dough.

With the leftover cream, cover the bollicaos and enjoy!
