We keep the white part of the leek and cut it into pieces.

Add the leek in a frying pan with a little EVOO until it poaches for about ten minutes. Add the potato peeled and cut into pieces and leave it for about 5 minutes.

Finally, add a little milk and a little water and let it cook for another 15 minutes.

Set aside and let it cool for a while and pass it through the blender. If it is too thick you can add a little more water or milk to taste. Garnish with black pepper and serve.
