In a deep dish, mix 80g of egg whites with 100ml of milk or vegetable drink. Add cinnamon to taste and beat. You can also add a sweetener to taste: date paste, sweetener, stevia, honey... I eat them with banana on top and for me it is sweet enough.

Dip the first piece of toast in the mixture and help it soak well. Turn it over with the help of a skimmer and make sure it is well moistened.

While the toast is soaking, heat a frying pan with a few drops of EVOO, coconut, etc. Put the first piece of toast in the pan and cover it. It is important to cover the pan so that it cooks properly inside. They should be cooked over medium heat. It will be about 3 minutes approximately on each side.

Serve and add accompaniments. I recommend fresh fruit such as banana, pear, kiwi, blueberries, raspberries... as well as a protein yogurt. .
