We have the rest of the leftover roast chicken from the rotisserie in the refrigerator and today we are going to take advantage of it

Cook the basmati rice according to the instructions. Chop onion, garlic and carrot. Sauté everything in the pan with a drizzle of olive oil. Once the rice and the sautéed vegetables are cooked, add the rice in the pan and stir it so that all the ingredients are introduced. Finally we chop the roasted chicken and stir. Add a pinch of salt and garlic and parsley seasoning.
