We put the water to boil with a pinch of salt. If the package says 10 minutes, we make them 9 minutes; since we will cook them 1 minute more in the pan with cooking water.

Cut the onion (half an onion), the garlic (two cloves) and the parsley. While the pasta is cooking, sauté the onion and garlic. When they are golden brown, add the crushed tomato and let it simmer for 2 minutes.

With the sauce already made and the pasta already cooked, without draining (with tongs or a fork) we pass the pasta to the pan. Water will fall, which is what we want. We can add a little more.

Let it cook for 2 more minutes. Season with salt and pepper and add the chopped parsley.

Serve and sprinkle some cheese on top (I have chosen grana padano). If we want it to be vegan, we substitute it with nutritional yeast.
