Cut into small cubes the tomato, bell pepper and onion. And cook in a pan over medium heat with a little oil, a clove of garlic and half a teaspoon of cumin, curry, paprika and salt.

When the tomato can be easily crushed, add the tomato sauce (or fried tomato in its absence) to the frying pan. Leave for about 5 minutes over medium high heat.

Cook the eggs in the tomato sauce over low heat with a lid (put a little oil where the egg will be placed to facilitate cooking).

Once the eggs are cooked, remove from the heat and serve with toast.
