We take the chickpeas and put them in a bowl to make them soft. I do it the night before so in the morning I already have them. The other option is to buy cooked chickpeas.

Once the chickpeas are soft, we put them in the blender or in the bowl that we will use to beat with the hand blender. Add the beet, salt, oil, pepper and garlic and blend everything together.

Once everything is beaten, we taste it and see if it needs some more salt or pepper. Personally, I don't like the color of just one beet, so I take advantage of this step to check the flavor and also add and beat the other beet.

Finally, serve in a bowl with a little more pepper or garlic on top. We can eat it with crudités, such as carrot, celery or cucumber or with corn chips.
