Prepare the couscous according to package directions and set aside.

Chop the vegetables (bell pepper and carrot) and cook in a pan with a tablespoon of olive oil.

When half done, add the chicken cut into small pieces and season with salt and pepper.

When the chicken is browned, add the coconut milk and curry. Mix well for about 5 minutes.
