I steam the pumpkin in the microwave for 10 minutes or until it is soft. I make enough to last for several days. The measure I use is once cooked.

Heat the frying pan while grinding all the ingredients in a mixing glass. The dough should be liquid but not too thick.

With the pan very hot, pour half of the batter to make the first pancake. Let it cook over medium heat until bubbles appear before turning it over. Once flipped, let it cook for half a minute.

You can add any topping you like. I use peanut butter.
