Baked oatmeal with strawberries and blueberries

In a bowl, put the oats, toasted walnuts, chopped hazelnuts, yeast, ceylan cinnamon and a pinch of salt. Mix everything well. In another bowl, put the glass of milk or vegetable drink, an egg, vanilla essence and sweetener to taste (I used Stevia). Beat everything well.

In a baking dish, we will first put a layer of blueberries and strawberries, then add on top of the fruits the layer of the first bowl of oatmeal, nuts, cinnamon, yeast and salt, covering all the fruit. Now it's time to sprinkle the oatmeal with the wet ingredients. Stir the bowl to make sure the milk moves down and seeps well through the oatmeal. Now sprinkle more blueberries and strawberry pieces on top. Add some seed mix...or sesame seeds...for extra crunch. Bake for 40 minutes, approx 200⁰ until the top is golden brown. Remove the oatmeal from the oven and let it cool for a few minutes for consistency. This oatmeal will keep well covered, 4 to 5 days. Simply reheat individual portions in the microwave before serving or eat it cold as is!
