Cook the rice in a pot of water with a pinch of salt.

While the rice is cooking, cut the onion, garlic and leek into small pieces and fry with a little EVOO.

Cook the cod on the grill in another pan with a little salt and black pepper.

When the sofrito is almost ready, add the crushed tomato for flavor.

Break the cod into pieces and add it together with the rice, stir for a few minutes and add the refried mixture.

If the rice is too dry, add a little more crushed tomato.

Finally, add some parsley leaves to decorate (and add more flavor).
