First we turn the oat flakes into flour (you can use oat flour directly). Then, we sift the dry ingredients: flours and yeast.

Mix in another bowl the EVOO and the vegetable milk. OPTIONAL: you can add in this step some sweetener.

Add the dry ingredients to the wet ingredients bowl slowly and knead. Preheat the oven to 200º. Knead the dough between two baking papers until it is about 3 mm wide.

We make the shape of the cookies in the dough with a circular cutter and put them on the baking tray. Before putting them in the oven, make some holes with the help of toothpicks. Bake them in the oven for 15 minutes at 200°.

Take them out and let them cool on a wire rack. Once cooled, dip one side in the melted chocolate and chill for at least 10 minutes in the refrigerator.
