Preheat the oven to 200°C. Cut the onion, leek and carrot into small pieces and with a spoonful of EVOO fry them in the frying pan until lightly browned.

On the other hand, cut the broccoli florets into smaller pieces, wash them well and put them in a steamer or covered on a plate in the microwave for a total of 4 minutes (stop after two minutes to move them).

In a bowl add the egg whites, egg and spices to taste. Add a splash of milk or vegetable drink and stir everything together. Then add the vegetables to the bowl. In this step you can include the protein that you like.

Also chop half of the mozzarella in the bowl and stir. Then, in a baking dish grease the sides with a little EVOO and pour the mixture from the bowl. Chop the other half of the mozzarella and put it on top.

Bake in the oven for 30 minutes or as long as each oven needs. To know that it is done, prick it and if it comes out clean or almost clean and the mozzarella on top is golden brown, you can take it out. Even if the utensil you use does not come out completely clean, the egg ends up curdling with the heat itself once out of the oven.
