The first thing to do is to take the half cauliflower and grate it, it will be a kind of flour that we will cook for 5 minutes. Once done, we drain it very well, removing all the water, and pour it into a bowl.

Add the grated parmigiano and the rice flour (or wheat flour) and a pinch of salt and knead the ingredients well. If it is too floury and falls apart, we can add a few spoonfuls of the cooking water :)

Then we make well-defined balls and put them through a fork pressing a little bit, but without overdoing it. It requires a little patience, it was hard for me at first but then I was getting practice as I made more :)

The last thing we will do is to cook them in plenty of water for about 5 or 6 minutes (we throw them when the water is boiling). Just drain them and add the pesto or the sauce you like the most, and enjoy!
