We brown a little garlic with olive oil and add the rice. Add 3 parts of water for each part of rice and boil for one minute over high heat. Add a pinch of salt. Lower the heat and boil until the water evaporates and if it is still hard add more water.

Brown onion in a frying pan, sauté spinach and mushrooms.

Add the rice to the pan with the rest of the ingredients.

Finally, we can add raisins, peanuts, or others because it makes a very good mix. In this case I have added a chopped fig.
