Pizza fit with broccoli dough

First we make the broccoli dough. To do this we take the raw broccoli and grate it, with a grater, chop it with a processor or knife. Then we put it in the microwave for about 3 minutes or until we see that it is half done. Let it cool and while we cut the cheese slices very thinly. We proceed to add the slices to the broccoli and the eggs, add salt and pepper and the herbs that we like. Also in this step we can add some kind of seeds or even nuts in small pieces and each time our dough will be different. We mix it all well until it is integrated and then we pour it on a baking paper already placed on the tray. The dough should not be too consistent, it should not be easy to handle or shape with your hands, but it should be integrated and not liquid. It is important that it does not have too much egg or later it will not be possible to take a piece as if it were pizza. We give the form that we like the dough with a spoon or with a tongue, then we put it in the oven at 160 about 20 minutes or until we see that it is golden brown. That is the moment to take it out.

While the dough is being made, put a quarter of finely chopped onion in a frying pan over medium heat. When it becomes transparent, add the spinach, either frozen or fresh. It is important to wait until the water that the spinach will release evaporates. When there is no more water in the pan, add salt and pepper to taste and the beaten fresh cheese and mix everything well. Now is the time to adjust the salt and pepper and add the nutmeg to taste. If you have used whole spinach now would be the time to pass the mixture through the blender to make a homogeneous sauce that serves as a base for the pizza, if you have used spinach in portions as I did, this is not necessary and the sauce would be ready.

While the sauce cools, we proceed to put the asparagus in pieces a couple of minutes in the microwave so that they are not too raw on the pizza, if you like them very crispy, you can skip this step. Chop the rest of the vegetables and wait for the pizza dough we have taken out of the oven and the sauce to cool a little.

Once we have everything, we put the sauce on top of the pizza dough, I put a generous amount, because when we put it in the oven is more compact, we add almost all the mozzarella at this point, it is important to make glue and we do not go all the ingredients with the cheese in every bite. On top of the mozzarella we put the rest of the ingredients from those that need less cooking to those that need more, the meat in last place because it would be the one that more cooking is going to need, we can pass it before by a frying pan if we want that it takes less in being done. I have used these ingredients but you can use any one you like. On top of the pizza we add the rest of the mozzarella that we had left and the parmesan. It is important to add a little salt on top so that the vegetables are not bland. We put in the oven for 10 minutes at 190 or until we see that the cheese is golden brown and ready to eat.
