Fry the potatoes in EVOO until they are well cooked, about 20 minutes approximately.

Then in a colander we remove all the remaining oil when they are already fried. On the other hand, in a bowl beat the eggs well and add a pinch of salt to taste.

And finally mix the potatoes with the egg all together and fry in the pan. Personally I like it very tender and raw so I don't have it too long but it is up to each one's taste, if you like it more done have it longer.
