You can use any tomato sauce but if you want to make it yourself: For the tomato sauce: cut the tomatoes (3-4 pieces), a not very big piece of onion and a clove of garlic and crush it. Put it in a pot with a little EVOO, salt and spices to taste and cook over medium heat until it is ready (20-30'),

For the dough: clean the cauliflower and put it in a mincer until it becomes a coarse powder (if you don't have a mincer you can do it with a grater, I have done it and it looks good both ways). Put the cauliflower in a frying pan without anything else and cook for 2 minutes. In a bowl put a smooth cloth and put the cauliflower there and squeeze to remove the water (important step, otherwise it will be very wet).

Once the cauliflower is drained, put it in a bowl and add the egg, salt and spices to taste (I add oregano and pepper) and mix well.

On a tray put baking paper and with your hands take a handful of dough and make the shape of our pizza (can be a whole, or several). I advise you to make them very thin, and leave a centimeter thick. Bake about 15' until it gets a little golden brown.

When we see the dough is golden brown we take it out of the oven and assemble our pizza, I first add some grated goat cheese and on top of the tomato (so it does not spread) and then the ingredients you like (I usually make it with vegetables, onions, peppers and mushrooms that I usually sauté a little in the pan) and black olives.

Once assembled, put the pizzas in the oven for 5'. After 5' I add the fresh mozzarella and leave for another 10-15'. When I take them out of the oven I add oregano and basil and they are ready to taste.
