Cut and peel the potato, zucchini and carrot.

In a microwave safe container put the vegetables and season to taste. Microwave for five minutes.

After five minutes use an air fryer to cook the vegetables (15 minutes at 200grados) or in case you don't have one, put them in the oven for 20 minutes.

Make the scrambled eggs with avoe in a paella pan.

Serve: vegetables, omelette and sliced mozzarella.
