Cut the eggplant in half and bake it in the oven for about 30 minutes.

Chop the onion and poach it in the pan.

When the onion is browned, add the minced meat, stir for 2-3 minutes, add the crushed tomato and spices to taste and simmer for about 15 minutes.

Remove the eggplant from the oven, empty it and mix it with the sofrito.

Stuff the eggplant with the mixture and add cheese on top and put it back in the oven for 5-10 minutes.

Remove from the oven and serve
