Cut zucchini into thin slices. Cut tomato wedges. If they are cherry, make a cross in them. . Cut onion in the desired size. Arrange everything on the tray and add some pine nuts on top.

Pour a drizzle of oil on top. As spices I have added: salt, pepper, basil and oregano.

Put in the oven at 170º and bake for 30 minutes. Take out and sprinkle a little fried tomato and mozzarella on top. I have added more oregano here.

Leave it for another 10 minutes until the cheese melts and... Done!
