Preparaci贸n de la receta

Heat a frying pan with a few drops of EVOO. Meanwhile, cut the leek, tomato, zucchini, date and chicken breast into small cubes.

Once the oil is hot, add the leek and when it starts to color, add the tomato. When we see that the tomato has softened, we can crush it a little with a fork to release its juice.

Next, add the breast and turn it around so that everything is well integrated. Let it cook for about 5 minutes and then add the dates and spices to taste, in my case black pepper and Provencal herbs.

We put a saucepan with water and when it boils, we add the noodles. While the noodles are cooking (2-3 minutes), watch the pan and when the sauce is almost ready, add the tablespoon of soy sauce and a little of the cooking water of the noodles.

Drain the noodles and add them to the pan, mixing them with the sauce. Let them rest for a few minutes, while we crush half an avocado and saut茅 the zucchini on the griddle.

Now all that remains is to assemble our dish: place the noodles in the center, with the avocado and sun-dried tomato on top and the zucchini slices on the sides.
