Beat the eggs alone to make them a little frothy. 🥚

Mash the ripe banana (mash it) and put the apple (peeled better) 2 mins in the microwave. 🍌 🍎

Beat the mashed banana and baked apple with the egg, and add the coconut yogurt (it can be plain yogurt if you prefer) and the vegetable drink (I used coconut).

In a separate bowl, mix the oats with the yeast, cinnamon, vanilla essence (if the vanilla is liquid, then add it in step 3) and nutmeg. And gradually add this mixture to the other bowl, whisking all the while. 🥣

We will have a fairly thick homogeneous batter, and we will add it to the waffle iron (previously greased with EVOO or coconut oil, so that it does not give too much flavor). I add about 2/3 tablespoons of batter per waffle, but it depends on the quantities of the waffle iron, the important thing is that the entire surface is filled with batter but without exceeding, because then it rises. 🧇 It is important to grease the waffle iron every time you put the batter in it!

You can make it VEGAN 🌱 by replacing the egg with 1 tablespoon of chia seeds in 3 tablespoons of water (stand 30 mins) or with 1 tablespoon of Vegan Egg (or if not, chickpea or cornmeal) in 2 tablespoons of water. Step 1 would then not be necessary.
