1️⃣Hacemos the cream of dates by soaking them pitted for a couple of hours (best in hot water). Then remove the skins and beat with a little of their water.

2️⃣En mix well the grated coconut, coconut milk, olive oil, vanilla extract and date cream in a bowl until a homogeneous mass is obtained.

3️⃣Hacemos compact the dough into small balls and place them on a tray with baking paper.

4️⃣Las put in the refrigerator for about 3-4 hours.

5️⃣Derretimos about half a bar of microwaved chocolate.

6️⃣Bañamos the balls in the chocolate and place them back on the tray. Sprinkle a little grated coconut on top and put in the fridge for about 15 minutes.

Voilà, our coconut balls are ready! Delicious! Yum yum yum!

☝🏻 You can use the liquid sweetener of your choice. ☝🏻Si you can leave the balls in the fridge overnight before dipping them in chocolate, even better. ☝🏻Con these quantities gave me 18 medium sized balls.
