Separate the egg whites from the yolks in two bowls.

Add a teaspoon of baking soda and a teaspoon of salt to the egg whites and beat until stiff.

Beat the egg yolks with two small tubs of 0% Burgos cheese.

Add 1/3 of the egg whites to the bowl of egg yolks and mix with enveloping movements. When well blended, continue adding the egg whites a little at a time.

On a baking sheet with parchment paper we make 6 small mounds of the mixture (so that it is similar in size to a hamburger bun) and spread with a spoon.

Bake in a preheated oven at 160ºC and bake for 15 minutes. When they are toasted, take them out and let them cool for 5' on a rack.

Fill with whatever you like, sweet or salty. We have made these fillings: * Light Philadelphia with turkey *Light tuna with green olives and light mayonnaise. *Sliced tomato with guacamole (without lid) I must say that the filling we liked the most for its juiciness is the tuna with olives. But you can fill them with whatever you want.
