Zucchini spaghetti with poached egg

Cut the zucchini with a peeler lengthwise.

Peel the garlic clove and chop the onion.

In a frying pan put a little EVOO and cook the garlic and onion for 3 minutes (until golden brown).

Then add the zucchini strips and cook for 5 minutes. Then add the crushed tomato and cook for another 2-3 minutes.

Add the grated cheese and some oregano and... Ready to serve!

Optional (you can add a poached or hard-boiled egg if desired on top of the spaghetti).
