Boil the necessary amount of water to cover the cashew nuts. When it is boiling, put it in a bowl with the cashew nuts and let it stand for 15 minutes. Cook the pasta according to the package directions.

Meanwhile, chop and sauté 4 cloves of garlic.

Next, put in a blender or food processor the cashew nuts, the zest and juice of a whole lemon, salt and the sautéed garlic. Blend everything, it has to be very doughy.

Of the pasta water we have to reserve about 300 ml approx, and we are going to add it little by little to the cashew sauce to make it more liquid. Add as much water as you want (I did not use the 300 ml).

When the pasta is cooked and the sauce is ready, mix everything together and serve with black pepper on top, coriander and sesame seeds.
