Sweet yucca 🥐🧇🍫

Melt 25g of unsalted butter 🧈 in the microwave for a few seconds and let it warm while you cut 🔪 the ends of the yucca and discard them. Make four or five shallow cuts to make small pieces and be able to finish splitting easily with your hands 💪.

Slightly introduce the knife to lift the rind and the pinkish part and easily peel each piece. Cut in half, ⚠️ making sure to remove all the central stems (like a string of esparto grass), and cut into smaller cubes.

Place in the LeKue steam pan (or glass container covered with film), add two tablespoons of water 💧 and heat in the microwave at maximum power for 12 minutes. Grind with a food processor in several batches with 20ml butter and half a teaspoon of vanilla paste (optionally replace with EVOO and add a teaspoon of erythritol or sweetener to taste).

Take out the dough (it should be manageable without greasing) to make a ball and cut into two portions. Place between two vegetable papers and knead in a rectangular shape to make mini croissants (10-12 minis) or wrap in plastic wrap and let cool to give the desired shape before cooking.

For the 🥐cut into triangles, fill to taste with choco 🍫 85% and/or nut cream and roll up the wide part to make the shape. Brush optionally with a little milk or egg white and bake ♨️ in air fryer at 180⁰ about 10 minutes without preheating or in conventional oven 10-12 min. preheated to 200⁰.

Serve warm with a glass of milk, favorite vegetable drink 🥛 or natural protein yogurt😋. They fly!!! 🤤🥐🍫
