This recipe was born from an old melon that I didn't want to throw away, giving a surprisingly delicious result. It could also be made with a tasteless melon so it is a great recipe for making the most of it.

We remove the bone of the two dates and put them to soak in the fire with a little water (not too much) until the water is very hot, turn it off and leave it to soak.

Peel and cut all the melon you want to use. I used a whole medium melon because it was overcooked. Use everything, even the flesh that sticks to the peel.

We can do it in two ways, if we use Mambo or thermomix or similar. We put the dates with the soaking water and grind them, then add to the date paste all the chopped melon and the juice of a lemon and program about 45 minutes at 100 degrees speed 2 power 3. If we do not have a machine, we do it on the fire stirring.

To find out if it is done, set aside on a plate a little, let it cool and pass the spoon through the center, if it remains separate it is ready, if it joins it has a little left.

Once done, we transfer them to sterilized jars and leave them upside down until they cool down. If you leave it like this for 24 hours, the vacuum will last longer. Ready to store in the pantry or refrigerator and enjoy.
